The 18th G20 Summit is currently taking place in New Delhi from September 9th to 10th, bringing together leaders from 20 major economies and the European Union. These countries include Argentina, Australia, Brazil, Canada, China, France, Germany, India, Indonesia, Italy, Japan, Republic of Korea, Mexico, Russia, Saudi Arabia, South Africa, Turkey, the United Kingdom, the United States, and the European Union.

A unique highlight of this year's summit is the exceptional culinary experience offered to the attendees. The chefs at ITC Maurya have meticulously prepared over 500 dishes for the G20 guests. Moreover, the spouses of the leaders had the privilege of enjoying a millet-based lunch prepared live by renowned chefs Ajay Chopra, Kunal Kapoor, and Anahita Dhondy at the IARI Campus.

Here's what Chef Ajay Chopra and and Anahita Dhondy cooked

Chef Ajay Chopra took charge of creating a delightful dessert, presenting a healthy and delicious Lemon Mille-Feuille. He gave a nutritious twist to Thekua, a traditional dish from Bihar and Jharkhand, by incorporating Finger Millet, also known as Ragi. These Thekua-inspired cookies were layered with lemon curd, reminiscent of Shrikhand from Gujarat, sweetened with millet khichdi and fruits.

The G20 Summit in New Delhi not only serves as a platform for political discussions but also showcases India's diverse culinary heritage, with a particular focus on sustainable and nutritious millet-based cuisine. This event underscores the role of food in bringing people together and promoting international cooperation.

On the other hand, Chef Anahita Dhondy prepared a Raw Banana Barnyard Millet Tikki for the First Ladies in attendance, deviating from the typical Aloo Tikki. Anahita Dhondy, a well-known advocate of her traditional Parsi food culture, is celebrated for her expertise in the rich cuisine of India's Zoroastrian community.
