Chef Roberto Zorzoli has created a special menu at Romano's at JW Marriott Mumbai Sahar

Salty, Sweet, Sour, Bitter, Astringent, Pungent and Umami – the seven tastes of the human sensory palate are what's in focus at Romano's, the speciality Italian restaurant at the JW Marriott Mumbai Sahar. Chef Roberto Zorzoli has created a limited edition menu, The Flavor Chain, that has been created to make you experience one of the seven distinct taste profiles of food.
At Romano's, we tried some of the dishes from The Flavor Chain. Here's our pick of what we liked best...
Salty: Polenta Salata
Before we tried the dish, the chef placed some Black Truffle Sea Salt on the side for us to sprinkle over it. We did, but even if we hadn't, the tantalisingly salty polenta served with a smatter of creamy pecorino sauce was delicious on its own. The slightly sweet golden beetroot salad added a different texture to it.
Astringent: Barbabietola e Melograno
Thinly-sliced beetroots are served with charcoal goat cheese and pomegranate, enhancing the astringent taste of the appetizer.
Umami: Shiitake Mushrooms Lamb
Probably the best dish in the Flavor Chain menu, the pan skillet lamb polpette is served with a silky, delicious shiitake mushroom stew.
Pungent: Zuppa di Carote e Ginger soup
If you're looking for comfort in a bowl, try this baby carrot and ginger soup. The strong taste of ginger lends the soup a zingy warmth.
Sour: Salmone all Aceto Di Mele
The Scottish salmon is grilled to perfection, and when had together with the tart green apple and celeriac mousse, it's quite a mouthful. The vinegar reduction keeps the dish moist and further adds to the taste.
Bitter: Tiramisu al Cioccolato
The dark and decadent mascarpone and coffee cake is sinfully creamy and smooth - just right for those who love their chocolate desserts on the bitter side.
Sweet: Cremino de Panna
And for those who can't do without their share of sweetness, this creamy berry pudding with brown sugar is a must-have. Not only does it look like a work of art on the plate, but the granulated brown sugar lends the pudding a beautiful texture too.
