Indian food is traditionally synonymous with the festive thali. Re-creating the same experience is The Oberoi, Bangalore, who will have a special thali festival, trying to showcase the culinary tradition.
Chef Saket Ranjan of Le Jardin has put together some of the best dishes from across the nation into three different thalis. “You have the vegetarian thali, which has a fair deal of popular dishes ranging from Rajasthan to Bengal. I have a special Navratra thali, which is meant for those who are following the special sathvik diet for the festive season,” says Chef Saket.
Some of the signature dishes that have been incorporated in these thalis include all time favourites like Achari Paneer, Palak Ki Roti, Dal Ki Poori and Kashmiri Pulao. The Navratra thali has some interesting options like Aloo Sabudake Ki Tikki, Singhare Ke Aate Ki Roti and Aloo Pudina Raitha.
“While the festive season sees people turning vegetarians, today most people don’t mind eating out and eating meat during festivals. The modern times have brought in some changes. This is why we’ve also introduced a non-vegetarian thali,” says Chef Saket.
From Gosht Korma to Sunehri Jhinga to Methi Murgh and Macher Jhol there’s a great spread.
Be at Le Jardin, The Oberoi, MG Road, between October 24 and 29. Thalis are priced Rs900 onwards.
