Continuing to be pocket friendly, East Pune, primarily Camp, is our pick for veggie shopping this week. Most vegetables you find here are cheaper (by Rs5-10) than the rest of Pune, especially Model Colony. Last week’s most expensive veggie shopping destination, Aundh, fares better this week, with prices of some vegetables coming down considerably (tomato was 40/kg, and is down to Rs 20/kg this week).

The most expensive vegetable is capsicum, while the cheapest is spinach this week as well. While many have the misconception that the LBT strike is causing the rise in vegetable prices, fact is, vegetables are usually more expensive in summer, for they are hard to grow in this season.

Our recipe this week features the nutritional powerhouse, spinach.

Spinach Souffle (savoury)
Method:

Clean and wash spinach leaves. Sauté garlic in butter until golden brown, add in the onions and sauté for a minute. Add spinach and stir for a minute, add in the veg stock.

Simmer for a minute, then remove from heat and cool down for 5 minutes. Blend it to a smooth paste in a mixer (it should be a fine smooth mixture – puree). Add beaten eggs and cream, season with salt, pepper and nutmeg. Fill this mix in a small bowl, making sure you line it with plastic/cling film. Take a flat pot, add water in it and keep the moulds in the pot. The water should be half way through the moulds. Put the pot on flame, cover and simmer for 15mins. Cool down and slice half horizontally.

Ingredient 
Fresh Spinach: 500gm
Onions chopped: 1 cup
Garlic chopped: ¼ cup
Vegetable stock: 1 cup
Eggs: 4
Cream: 250 ml
Nutmeg ground ½ tsp
Assorted vegetables dices, blanched and tossed with herbs and butter: ½ cup
