Theme lunches give a taste of real world in Pune

The All India Shri Shivaji Memorial Society’s College of Hotel Management and Catering Technology in the city is organising theme lunches every week, as an attempt to prepare students for the real world. This month, the college had organised ‘Live Wire’, based on hard rock and ‘Marine-o-shell’, which was an aqua theme.

The students had to work on the menu, service style, decor, music and other nitty-gritty. Thus, they had to work around a budget for the food and decoration to enhance their entrepreneurial skills. The students also dressed according to the theme to make the meals authentic in all aspects. The lunches were attended by hospitality professionals and guest invitees from the industry.

The menu for ‘Live Wire’ included food items like drums of heaven, crunchy prawns pop, stuffed mushrooms, authentic American sub sandwiches, steaks, pastas and au gratin. Mocktails complemented the extensive menu while the dessert platter included lemon mint mousse, watermelon sorbet and brandy snaps filled with fruits.

‘Marine-o-shell’ started off with mocktails made in tender coconut water. Dishes like flavoured cream of crab and blush prawn tagliatelle were rounded off with a waterchestnut mousse flavoured with rosemary and served with blueberry compote.
