Restaurants in the city are constantly trying to keep up with the needs of foodies. It’s summer and keeping the season in mind, chefs have come up with a range of special salads for those who want to beat the heat in style.

Out of the Blue in Bandra and Powai has gone the extra mile and launched a salad menu for patrons to dig into. Sartaj Bedi, of the outlet says, “We have an orange and pomegranate salad with ginger dressing, among others… the endeavour is to give guests a great combo that is perfect for the season,” says Sartaj. Chef Suresh Thampy of Courtyard by Marriott has salads for those who are seeking a healthy option. “We’ve included Asian Coleslaw, Thai Seafood Salad, Thai Shrimp and Mango salad, Asian Chicken Salad with Chilli Lime Vinaigrette in our summer coolers menu at MoMo Cafe. For ‘ladies who lunch’, this is a great alternative to the cream-based salads, with light dressing options,” says Suresh revealing that these salads are quite easy to prepare at home too.

Renaissance Mumbai Convention Centre Hotel has an exhaustive menu for the summers, and for a change, hearty options for vegans as well. Says Chef Danish Ashraf, “Vegan salads are light on the palate and high in fibre — they keep one active throughout a hot summer day.” Chef Nachiket Shetye of 36 Oak and Barley recommends the Warm Salad of Grilled Zucchini, Tomato and Basil with Katsiki Cheese for the season. The thought behind the summer special salads at the outlet, says Nachiket, is “to use ingredients that are seasonal. We’re also working on salads that include a lot of summer veggies like cucumber, watercress, cilantro, fennel and lemon grass. This enables us to make fresh salads with minimum dressing as the summer vegetable are juicy and luscious on their own.” Chef Paul Kinny of Intercontinental Marine Drive has a line up of salads comprising refreshing ingredients like green apples, rucola leaves and tangy and cooling orange dressing to beat the summer heat, while Chef Rajesh Ratna of Escobar has whipped up salad specials that can be consumed as a wholesome meal in itself. “Greek Salad is perfect for summers while Chevre and Rucola salad, with ingredients like the rucola leaves, tomatoes and exotic kiwi — perfect for the summer—with fresh lime vinaigrette and crumbled goat cheese are the order of the day,” says Rajesh.
