Patriotic flavour, alright!

On Republic Day today, hotels get busy preparing a saffron, white and green menu.

After the recent season’s red and white themed store windows that made for eye candy and tastier fare that matched it, it’s Republic Day today that’s going to be the cynosure of all eyes, and city eateries are planning a variety of dishes dressed in tricolour to tempt the tastebuds…

Dressed right…
At a Sindhi food restaurant at at a mall in Ghatkopar, the theme pays tribute to the leaders of the nation. Says Prem Multani of the restaurant, “All the waiters there will be dressed up in kurtas, khadi jackets and Gandhi topis to lend the right ambience to the patriotic atmosphere. While the place will have framed photos of freedom fighters, the entire restaurant will be decorated with flags. And the menu will have special dishes like Sabzi Hindustani, Veg Tirangaa and Tricolour Salad.”

Aditi Kamat of Home Chef, an eatery at Shivaji Park, says the tricolour theme is
going to be perfect for the day. “I wanted to do this and thought ‘why not create something different from the usual sandwich-dhokla fare?’. Thus, I conjured up a tricolour pasta and a cranberry and kiwi mocktail with a touch of mandarin so it looks orange. Of course, there will also be the usual tricolour sandwiches and specially done multi-grain pizzas,” she informs.  

At Cafe Basilico, a few dishes have been created to capture the spirit of freedom. Are you in the mood for a Tricolor risotto, with three flavours of spinach saffron and cream served with three pepper salsa?

Sanjay Mamgain, executive chef of VITS, Mumbai, offers an insight into his specially created buffet for the day with dishes like tiranga paneer tikka and a tri coloured fried rice.  While the Renaissance hotel, Mumbai, plans to present an elaborate spread of various regional cuisines from across the country with fare like Tiranga koftaa and trio of pistachio, white and orange mousse, the Lotus Café at the Marriott is also going be dressed in the colours of
the day.
