Eating by the roadside has its own thrill, but it also exposes the consumer to the risk of unhygienic food. However, Ahmedabadis can now leave behind their worries and savour roadside fare, as a student of MICA-EDC promises to serve hygienic food on the roadside.

Under a venture incubated in MICA-EDC, called 'Healthy Earth Services Pvt Ltd', Ruchir Joshi, a student of the institute, has launched a mobile van which will sell hygienic food on city roads.

Talking about the venture, Joshi said, "Healthy food has become a buzzword, but people tend to link it with organic food or medicinal foods and drinks. Not much attempt has been made to make the conventional street food healthy despite its popularity among the people. Our venture looks to fill this gap and give a new meaning to healthy food."

Joining hands with Joshi in this business venture is former gym trainer Deepak Patel. The two will initially start this venture with one mobile van and four employees. Painted in green, the mobile van has a fast food kitchen equipped with huge glass windows that swing open and gas stoves.

The van will be parked at different places in the city at different hours of the day. Joshi said, "It will provide transparency, customers could see the cooking process and also check whether cleanliness has been maintained."

The vegetarian food wagon will provide 25 items, including soups, juices and fast foods items such as Momo, Falafel sandwiches, Kathi roles and Thai noodles.

Patel said, "We will be using sunflower oil in the food items, but at the same time will also try to cut down the amount of oil used. Steamed food and protein shakes (especially for body builders) will be among our special items. Everything will be available at a very competitive price."

The duo has so far invested around Rs6 lakh into the venture, of this MICA-EDC has funded Rs50,000. Talking about their expansion plan, Joshi said, "We will be rolling out three more vans by the year-end." About further expansion outside the city, Joshi said, "We have contemplated this idea. But, for the time being, we are concentrating more into establishing us in the city.”
