Breaking the pattern of steady vegetable prices, this week has seen a sharp increase in prices owing to short supply. While, basic veggies like potato and onion remain unchanged, tomato and cauliflower have become dearer by Rs 12 and Rs 20 respectively. And that’s the reason we choose potato (whose price has been most stable) for this week’s recipe.Often regarded as a ‘fatty’ vegetable, potato, on the contrary, is a healthy choice. Loaded with essential carbohydrates for the body, they are also one of the richest sources of potassium (greater than even banana and broccoli). While it’s a functional veggie, most of us use it only as a ‘main’ dish — jeera aloo, dum aloo, aloo-tamatar, or aloo with another vegetable like aloo-gobhi. This week Aniruddha Limaye, executive chef, Courtyard by Marriott Pune Hinjewadi, brings potato as a soup.
