Pizza Kitchen by 1Tablespoon, formerly known as 1Tablespoon is dishing out 100 per cent sourdough pizzas. Varun Sheth the brain behind the brand tells us why they decided to switch to a sourdough base. He says, “Our reason for introducing a sourdough pizza were twofold. We wanted to focus on flavour and digestibility. When it comes to most pizza bases the focus is always the sauce, cheese and the toppings. As a result the flavour and the texture of the pizza base is ignored. Sourdough has a unique flavour and a slight tang that really works to create a yummy pizza base. Also, the process of making it involves breaking down of the enzymes that make it difficult to digest. Hence, making it easier to have more of it.” But the final test is always in the pie, and we were impressed with what we sampled.

Rosa Mexicana (Rs 500) A Mexican-flavoured pizza with blackbean sauce and topped with fresh tomatoes, sweet corn fresh jalapenos and onions, topped with chipotle Adobo dressing is a treat for those who are vegetrain and enjoy the heat of chillies. The Goat Cheese (Rs 530), an exotic pie with an in-house tomato sauce, topped with caramelised onions, goat cheese, fresh basil and mozzarella has a more subtle flavour, but is absolutely delicious. The BBQ Pollo (Rs 520) has a sweet, tangy, spicy and smoky flavour profile that takes some getting used to. It’s topped with housemade BBQ sauce marinated chicken, mozzarella and scarmoza cheese. While the Americano (Rs 660) is a classic pepperoni pizza made using imported pork pepperoni that will satiate the hunger pangs of many a meatlover. The best part is that these pizzas are avaiable as a size or you can go the whole hog - 11 inches to be precise.
Overallverdict: If you are bored of eating fusion pizzas and are looking for something unique and tasty, these sourdough pizzas could be the answer.
