Chocolate Soil

Though mud cakes have no resemblance to mud except the brown colour, home chef Pratik Kuckreja's accidental creation of 'chocolate soil' is made with crystallised Belgian chocolate. He's got the texture right and serves it in an earthen pot covered with gingham cloth. Take a scoop, and you will find several layers of goodness: fudge, hazelnut, peanut butter and more.Once you get started, you will not be able to stop. The Volcano

While a real volcano erupts from within, SpiceKlub's offering is the dormant version. So while the powdery exterior hides gooey chocolate magma inside, a 'lava' of kesar milk is poured on top via an injection. Oh, and droplets of guava jelly surround the mousse cake. If you had seen the soap cake on a kitchen or wash basin rather than SpiceKlub in Lower Parel, chances are you would have picked it up to wash your hands.And who can blame you? It is hard on the outside and soft on the inside, with a rasmalai-flavoured froth balancing the bitterness of the dark chocolate cake. Chocolate Explosion

Along with a big ball of gourmet chocolate, this chef's special brings you a touch of drama. He first pours liquid nitrogen onto the chocolate ball, lifts it to a height and drops it on the plate with a glorious splat! The ball explodes to treat you to oozing candy floss and melt-in-the-mouth macaroons, frozen yogurt and chunks of chocolate fudge that it's filled with.
