INGREDIENTS

 

  • 8 cups broccoli (cut into bite-sized pieces)
  • 1/3 cup red onion, diced
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup bacon bits
  • 3 tbsp cider vinegar
  • 2 tbsp sugar
  • 1 cup mayonnaise
  • Salt and pepper to taste

 

METHOD

 

Whisk together cider vinegar, sugar, mayonnaise, salt and pepper in a medium bowl and set aside. In a large bowl, combine broccoli, onion, cranberries, sunflower seeds, and bacon bits. Pour the prepared dressing over it and mix well. Bacon bits and sunflower seeds can clump together when you add the dressing, so make sure you toss everything together well. Before you serve the broccoli salad, refrigerate it for about an hour. This gives the broccoli a chance to soak in some of the dressing, resulting in an even more flavourful salad!

14. BERRY AVOCADO QUINOA SALAD

INGREDIENTS

 

  • For the dressing
  • 25 ml olive oil
  • 5 gms lime zest
  • 10 ml fresh lime juice
  • 20 gms honey
  • 10 gms dijon mustard
  • 2 gms salt
  • 10 gms fresh thyme, chopped

 

FOR THE SALAD

 

  • 50 gms quinoa
  • 10 gms toasted, sliced almonds
  • 15 gms cherry tomatoes
  • 20 gms baby spinach
  • 10 gms strawberries
  • 10 gms dry cranberries
  • 25 gms avocados (peeled, cored and diced)
  • Feta cheese, crumbled for garnish

 

METHOD

 

In a bowl combine all the dressing ingredients. Whisk until well combined (or cover and shake if using a mason jar). Pour into a container and store in the refrigerator. For the salad toss all ingredients together in a large salad bowl. Pour dressing over top and toss. Garnish with almonds and feta. Serve immediately after adding dressing.
