Last month, I was been over worked (no complains) and over entertained (did get and entertained too). After all, you only get to have some of the festive fare like turkey, suckling meats, chocolates, cakes and others only during this time. It’s time to pull up your socks and get rid of the party pants. You can still eat well and keep the spirit going without damaging you mind and body.Rather than giving you a story or tale, I am suggesting some quick recipes that will be keep you happy with goodness and energy.It’s the season for strawberries. It’s best is to eat food in the season when it is available in prime quality.Strawberry Rajma Chaat Ingredients:1 cup strawberries, sliced50 grams cooked rajma (kidney beans)1 tbsp spring onions, chopped1 tsp dreen chillies, deseeded/chopped2 tbsp tomatoes, diced1 tsp fresh coriander leaves2 tbsp cucumbers, choppedalt to tastePepper to taste1 tbsp olive oil1 tsp lemon juiceA big pinch of chaat masalaMethod:Toss all the ingredients in a bowl. Chill.For the dressing, whisk together olive oil, lemon juice, salt, pepper and chaat masala.Toss the chaat along with the dressing.You can substitiute with strawberry with guava.Strawberry Blast1 cup strawberries cut into halves200 ml soy milk plain5 to 6 almonds1 tbsp honey4 to 5 ice cubesMethod:Blend all the ingredients well. Serve.Egg whites are a part of the power house. There’s nothing better than a soft scrambled egg white with whatever is available in your home. I like to use a combination of veggies, leaves, aromatics, and chillies when I make eggs.Using a non-stick pan helps you reduce the amount of oil or butter. I think it’s really important to have one in your kitchen A wooden spoon or spatula goes hand-in-hand with a non-stick pan Egg whites…fully loaded3 to 4 egg whites1 tbsp celery, finely chopped1 tbsp spinach, blanched and chopped1 tsp red bell peppers, finely chopped1 tsp green chillies, deseeded and chopped1 tsp olive oilMethodWhisk the egg white until foamy. This incorporates air and that result is light and fluffy eggs.Using a non stick pan, sweat the celery, spinach, bell peppers and chillies for 30 seconds or so.Pour the beaten egg whites into the pan and whisk until soft and fluffy.Season with salt and pepper.This is great for breakfast or even a mid evening snack.Eat well, Be happy!
