First concocted during the Prohibition years in the United States in the 1930s when speakeasy bartenders would mask bootlegged alcohol with fizzy drinks, juices and other non-alcoholic beverages, cocktails have come a long way. The photo-finish art and science of blending and mixing a variety of alcohol with all kinds of mixers is an all-time fascination for signature cocktail lovers.

Merlin’s, the lively karoake and live band bar at The Orchid Ecotel is home to Signature Springs — their unusual signature cocktail by bartender Niranjan Deshpande. This drink has Signature whisky marrying crème de banane and svelte Malibu as companion, all shaken and stirred with a garnish of chopped banana and a lemon curl on the rim in a martini glass.

Inspired by Ian Fleming’s hit Bond film Casino Royale is Vesper, the original Bond martini by The Hilton Tower’s executive assistant manager Srikant Peri and is a signature cocktail of the oriental bar Opium Den. The recipe? Gordon’s dry gin, vodka and martini bianco whirled up with ice cubes and dressed with a lemon rind twirl.

At The Lounge Bar at Le Royal Meridien, bar manager Kunal Gupta infuses magic into his signature cocktail — the Cosmopolitane. This drink with an instant eye appeal packs in a tangy herbal mix with drambuie, Absolut vodka and cranberry juice and is a hot favorite with regulars.

Sometimes, the name is just enough — mango caipiroska, bar manager at InterContinental The Grand Shantanu Kumar’s original signature cocktail.

Served at the Beluga, the hotel’s bar, this concoction is loaded with mood enhancers such as fresh lime juice, muddled mango and vodka topped up with crushed ice, garnished with sliced mango. Go on, choose your poison.
