Roca brothers of El Celler de Can Roca to open culinary lab

Roca brothers Joan, Jordi and Josep will be opening a culinary R & D center near their top-ranked restaurant El Celler de Can Roca in Spain, which has topped the World's 50 Best Restaurants list two times.

The project is similar in scope to that of Ferran Adrià, the more senior chef of avant-garde gastronomy who, after shuttering one of the most sought-after dining destinations in the world in 2012, began work on the El Bulli Lab which also serves as a laboratory for culinary ideas.

Opening a gastronomic research and development center is the latest venture for the Roca brothers, who are also ambassadors for the United Nations and recently launched an online cooking course.

The modus operandi for the Roca Brothers Foundation will center on a trio of principles: innovation, training and social responsibility. According to a message posted to Facebook, the foundation will be international in scale and focus part of its efforts at improving global food security.

“We will connect with the international community of chefs and stagiaires to cement a global culinary force that will take a substantial step to achieve universal food security under the umbrella of the United Nations Development Program.”

One of their first missions with the UN has been to help develop food preservation techniques for families in Nigeria in the aim of reducing food waste.

Adrià's model of parlaying his culinary fame into bigger and more ambitious projects has also been adopted by another protege, René Redzepi of Noma fame, who organizes an international food summit called Mad every year.

The project is still in its infancy, and no opening date was given.
