If you think maintaining a five-star-level kitchen would cost you a bomb, think again. Experts in food safety claim that it costs less than Rs200 per day to maintain a safe and hygienic kitchen or canteen. For a street vendor, food safety can be easily achieved at only Rs20 per day.
Ashwin Bhadari, head of business relations, Equinox Lab, explains cost efficient measures that canteens or kitchens can adopt for safety of food. “In reality, food safety requires only three simple steps - a clean, pest-free kitchen, fresh stock, and food cooked at the right temperatures,” he said.
Bhadri says that with investment in devices like refrigerators, food thermometers or Raytek, proper labelling mechanisms, and gear such as hand gloves, head gear, etc,it would cost an establishment only Rs160 per day to maintain a hygienic kitchen.
