The name’s quite a tongue twister. Chakum Chukum. It’s also the name of one of the busiest kathi roll joints in Indiranagar.

Located in HAL 2nd stage, this one-room food joint boasts the most scrumptious, sauce-dripping rolls that are as Bengali as they come. No wonder that the place is thronged by those from Kolkata who’ve made Bangalore home.

Started by husband-wife duo Sujoy Das and Arpita Sinha in August last year, the eatery was their dream come true. After spending years at O&M as client servicing director in Hyderabad and Chennai, Das’s third transfer brought him to Bangalore, where he, like many others in this startup kingdom, was itching to go independent—with his wife by his side, of course. “We both wanted to spend time with each other and so decided to start this restaurant,” says Das. 

The name Chakum Chukum, was his wife’s idea. “I woke up one day and told Sujoy that I wanted to name it Chakum Chukum. For me it’s an expression of hunger that makes you want bite after bite of anything that is tasty, crunchy and chatpata spicy!” says Sinha. The crunchy rolls they serve live up to the name.

The veg and non-veg rolls come with varieties of sauces. The rolls ordered the most seemed to be the mutton shammi roll, double egg chicken roll, mutton liver roll and paneer roll. Their palak paneer roll and mixed veg rolls are hot too. Calories watchers can also order wheat rolls and egg-white rolls which are available at a slightly higher price.

The restaurant, open all seven days of the week, attracts customers from all over the city. “I come to this place at least once a month. My daughter loves the food here and I think it is fresh and value for money,” says Anita David who visits from Whitefield just to parcel the rolls. The owners also narrate the story of how one customer dropped in at their place on his way to the airport to pick up a few rolls before flying off to Switzerland!

Try this at home

To make Dilkhush Mutton Chap, you need 1/2 kilo fresh boneless mutton, 25 gm each of garlic paste & ginger paste; 25 ml refined cooking oil and 2 tbsp curd (optional).

Chop the mutton to fine pieces and marinate it with a mix made from the rest of the ingredients. Add 30 gm each of poppy-seed paste and cashew paste, and a pinch of kesari for colour. Add salt and chilli powder to taste. You may add some mashed papaya to make the mutton tender. Marinate for one hour.

Heat some cooking oil on a flat pan. Add the marinated mutton along with a little water and cook for 15 minutes. Serve hot with raw onions, cucumber slices and tachas parathas!
