It’s an experience that’s set to entice all the senses — visual and sensory especially, with dining that is woven out of the alchemy of art, design, culture and cuisine. “Stimulating for sure,” smiles chef Sandy Jo of Le Royal Meridien who has thought up the fare at Fashionably Flames.

The menu has been curated to mean ‘fashion on the plate’. “Normally when you say the word fashion, one thinks of garments, but it need not be restricted to just that. It could well be a design of food and art,” he explains.

While Jo took inspiration from the mindset of a fashion designer who would be inspired with colours, texture, garment, pattern, and the final look or presentation of the design to his client, the idea was to create a menu that made a statement. “Every single dish on the menu — be it the Pernod flambé tiger prawns or jasmine tea smoked chicken breast or even the hors d’eouvre like chicken rillete with grape sherry vinaigrette has to be awe-inspiring while we present it to the guests.”

And enticing it gets alright! They have live fresh water scampies which are fresh and can either be flambéed with pernod to enhance the flavour or marinated in tandoori marination and cooked in front of the guest. In addition, soups like sherry flambé, barley soup — which is clear French onion soup accompanied with barley and rosemary collar and the angus steak imported from US coated with black pepper, grilled and served with Fondant potatoes, tantalises the taste buds as well.
