For Karishma Chandani, baking is a continuous learning process, where your passion drives your kitchen.

Early start
Baking was always my passion. It was my love for chocolates and desserts that got me into the business set of mind right from the age of 14. I was in Mumbai back then and I used to supply chocolates to a store nearby on a monthly basis. I still recount how I used to make as much as 100 to 200kg of chocolates even then during Diwali, which is the peak season for homemade chocolate makers.

Turning pro
I went to a baking school after finishing my studies, where I had formal training in baking and confectionary. This one year course has been the foundation of everything that I have learnt since. I joined the Taj President after my course, where I still recount some scary moments, where I’d see my cake being rejected and flung into the dustbin because it wasn’t perfect enough. I was made to slog through those days. I’ve learnt a lot ever since.

Starting cookie
I moved to Bangalore after marriage. While my home remained my priority, I didn’t want to lose out on my passion. This was why I decided on starting off at home. I have not advertised anywhere, I didn’t want to go all out. I wanted to ensure that I bake all that I do, else there would be a difference in the quality. This is why I have a limited set of clientele, who trust what I bake and come back for more.

The balancing act
I have an 11-year-old daughter, so I cannot afford to take too much time away from home. This is why I set up my studio in the basement of my home. I have my refrigerators, air-conditioners and the entire setup there. This way, I ensure that I am just a shout away from home.

Innovation
I keep on learning new courses every summer to ensure that I can give my customers something new. I recently was in Singapore for a month, I also went to Mumbai, where I learnt how to make Belgian chocolates. This is the best way I can keep in touch with my urge to bake.
