Make way for the vegivores!

After the carnivores, welcome the vegivores! And no, they are not shunning meat, just loving their greens a little more.

Guess what just got cool? Vegetables! Hail the rise of vegivores, a breed of people, who enjoy feasting on vegetables more than any meaty delights. They are not to be confused for vegetarians or vegans because unlike these two, vegivores do not shun meat, they just relish vegetables more.

Again it has nothing to do with health, but because of the epicurean appeal of vegetarian food.

Tuning into the latest food fad, executive chef Rohit Gambhir of Trident BKC has initiated a special only-veg menu  in restaurants.

“The percentage of people opting for veg food has upped by a significant number… We have special, additional all-veg menus for both our Italian and Indian restaurants. Soon, there’s going to be a new separate veg kitchen too,” explains Chef Rohit. He adds, “I’ve had to create a special veg buffets and introduce a Gujarati Maharaj too as Gujarati food is a total sell-out! Earlier we’d think of importing meat, but now we’re importing vegetables as well.”

Seconding this change in food choices, executive chef Paul Kinny of InterContinental, Marine Drive, predicts that very soon mushrooms will be the new meat. “In recent years, we have clientele who prefer vegetables over non-vegetarian food. This shift could have been triggered off for health reasons,” he says.

“Vegetables which are fresh, in season, and prepared well without an overdose of butter, cheese, crispy bread crumbs, or deep-fried are preferred. Suddenly you will see mushrooms being the new meat!” he adds.

Deepti Dadlani, communications head of Indigo Deli concurs, as she reveals that the restaurant has, of late, seen more people opting for vegetarian meals. She says, “In recent times, we’ve seen not just an increase in the vegetarian population, but also plenty of non-vegetarians opt for a veg platter. As a result, we have prominent vegetarian options in our menu in all categories: pizzas, burgers, sandwiches, etc. Even our ‘Daily Specials’ have plenty of vegetable dishes.”

The vegivore brigade is asserting itself not just in India, but across the globe, with people opting for sumptuous veggie fare and restaurants going that extra mile to dish out for them.
