In parts of Europe, coriander has traditionally been referred to as an "anti-diabetic" plant. In parts of India, it has traditionally been used for its anti-inflammatory properties. In the United States, coriander has recently been studied for its cholesterol-lowering effects.
Apart from being an aphrodisiac, condiment and medicament, coriander is used as a condiment in cuisine, in the perfumery industry and as a medicinal herb too.
Coriander seeds contain an array of phytonutrients. They are a very good source of dietary fiber, iron, magnesium and manganese.
Coriander supplies antioxidants that assist the body in various ways. It boosts immunity, fights aging, counters health-damaging free radicals, and more. Coriander is known to lower blood sugar by stimulating the secretion of insulin. Its anti-inflammatory properties are used in treating arthritis. Coriander can also be used to treat bacterial and fungal infections.
CORIANDER CHUTNEY
Ingredients:
1 bunch fresh mint
1 bunch fresh coriander
6-8 cloves garlic
1 inch piece of ginger
2 green chillies
1 tsp sugar
1/2 tsp salt
2 tsp lime juice
Method:
Cut off roots from both mint and coriander, peel garlic and ginger and remove stalks from green chillies. Wash all these ingredients thoroughly.
Grind these and all the remaining ingredients into a smooth paste in a food processor.
Chill and serve.
