As tempting as a crepe!

You might want to twist the rhyme to say: sugar and spice and everything nice, that’s what little crepes are made of! After all, the steaming hot thin pancake delight packs in fun, tasty ingredientsand with the mercury rising, it’s a light and healthy bite too!

What they are
The word comes from the Latin word crispa meaning curly.
Nicolo Morea (brother of actor Dino Morea), who relishes them, reveals there’s more than one reason to enjoy this French version of the American pancake. “The latter is fluffy while in French crepes, the latter is thinner, almost dosa-like in appearance and delicious too,” he says.

Variety of fillings
The basic batter ingredients are flour, butter, water, egg white and yolk. You can use sugar (if making them sweet) or salt and pepper (if they’re savoury).There are lots of options for fillings. “If you want, use pan-fried chicken, spinach or sauteedmushrooms which are a good idea. Go sweet with the sugar-cinnamon combination or then strawberry-nutella mix. If you’re a seafood fan, add prawns and squids to your crepe,” hints Morea.

Making process
One needs a flat non-stick pan or an iron griddle. “Heat that to medium temperature (add some butter. If it melts immediately turning golden-brown it’s OK). Pour some of the thin liquid batter on it batter and spread it as you would a dosa,” he explains.Here are some of his recipes for you to try using this process.

SAVOURY:
Light Weight
Oil - 20 ml
Onion, garlic, celery - 20 g
Shredded chicken - 120 g
Crushed pepper - 2g
Mixed herbs - 2g
White sauce - 2g
Processed cheese - 20g
Cocktail dip - 20g

Corny Crepe
Oil - 20ml
Onion, celery and garlic - 20g
Mushroom - 50g
Corn - 60g
Tomato concasse - 30g
Chilly flakes - 1g
Basil - 2g
Processed cheese - 20g
French fries - 60g
Cocktail dip - 20g

Da Vinci
Oil - 20 ml
Onion, garlic, celery - 20g
Chicken - 100g
Pesto paste - 20g
White sauce - 20g
Seasoning - 5g
Cherry tomatoes - 4nos
Processed cheese - 20g
Mozzarella - 20g
Bell peppers - 5g
Olives - 5g
Pesto dip - 20g

SWEET:
Coconut Banana
Sweet crepe or 1/2 waffles
Grated fresh coconut - 300g
Palm sugar - 150g
Cook till well blended and add diced banana - 4
Nutmeg powder -1/4 tsp

Fantasy
Strawberry crush - 30 g
Nutella - 30g

Note: Crepes can be served with a scoop of vanilla ice-cream or whipped cream.
