Truly scrumptious: How Mumbai eateries are having fun with corn

Mention bhutta in the monsoons and Mumbaikars feel a rush of nostalgia.

Soup up!

While we all love the tried-and-tested sweet corn soup, The Sassy Spoon adds a subtle twist to this classic with the smoked bacon. While the flavour can be a little overpowering for some, it is perfectly mashed, has a lovely medium-thick consistency and a hint of chive oil that lends it a distinct taste. Some find the soup even yummier than the bacon that’s dunked into it and would prefer having the meat bits served separately as croutons. But all in all, its great to slurp on in this weather.

Twist on the cob

Corn on the cob available on the streets is the ultimate symbol of Mumbai’s monsoon cuisine. LIMA, the South American tapas bar in BKC dares to prepare it a tad differently. The bhutta is soaked in milk for a couple of hours, grilled and then spiced with a chipotle rub to replace the regular ‘lemon and masala’ combination. For dipping, there’s cilantro sour cream. 

Crunchy two ways

If you’re looking for something desi but with a twist, look no further than 145 Kala Ghoda. Their Crunchy Corn Tempura will remind you of corn bhajiyas that Mahabhaleshwar is famous for—American corn kernels dipped in lightly in a cornflour batter and deep fried, served with a sprinkling of seasoning. Only here the tempura used makes it crispier, crunchier and saves you a long drive! To tickle your taste buds, it’s served with a spicy sriracha mayo.

On the other side of town, at Lower Parel, Chai Pe Charcha’s bhajiya made of baby corn has a thick chana-dal batter coating that will remind you of mirchi bhajiyas that go so well with cutting chai during the monsoon. They serve the offering with a green chutney, an irresistibly refreshing imli chutney, ketchup as well as schezwan sauce! But the fried batter-coating itself tastes so delicious, you don’t necessarily need the condiments. 

Corny breads

The Nutcracker boasts freshly baked bread made with polenta, a kind of maize flour. It’s squishy in texture and a mere bite is enough to unleash the flavour of corn, balanced with spicy jalapenos. The bread, plated with two slices topped with herbed garlic butter, makes for a yummy and fairly healthy and filling snack!
