The Christmas lunch and dinner table is a lavish spread that’s prepared with lots of love and labour. And while in the good old days, people had the time to actually prepare a feast of sorts, that’s no longer possible due to time constraints. That’s where caterers step in to take on the mantle and to dish out yummy festive treats. While regional favourites are an all-time hit, the American concept of enjoying a turkey for Thanksgiving has also trickled down here, with many Indians wanting to experience both carving and eating a stuffed turkey. And while many may not be experts in preparing the bird at home, there are experts willing to don the apron for you for a fee. Here’s whom you can approach in the city to get your stuffed turkey home.

Jordan D’souza, Borivali

J B Martin Roast Masters’ Jordan D’Souza has been taking orders for stuffed Christmas turkeys for more than two decades now.  He says, “I get my culinary skills from my grandmothers (from both sides of the family), who were caterers and would cater for the community. Jordan quit his hospitality job in 2003 to start a family-run cold storage and Anglo-Indian catering service. He says, “We specialise in all kinds of roasts, and take orders for both stuffed and unstuffed turkeys. It takes about five days in prep to prepare a turkey. Since turkey is a big bird, it’s not really available in small sizes. You can get a 6 kg unstuffed turkey for Rs 1,100 a kg or an 8 kg stuffed turkey for  Rs 8,800. It comes with a complimentary roast gravy and you can choose your stuffing from chicken, bacon, pork, spares, cold cuts or dry fruits. For, those who want to try a suckling pig, we accept orders for an unstuffed suckling pig for Rs 1,250 per kg or an 8 kg stuffed suckling pig for  Rs 10,000).” Jordan shares that while a traditional American turkey is served with cranberry, honey or plum sauce, he can do a Goan roast, a chilli bean or a spicy Malabar roast turkey to suit Indian tastebuds, offering to carve the bird for you if you so desire. He delivers across Mumbai, and there is a minimum delivery charge applicable.

Luisa Rocha, Colaba

SoBo-based Luisa Rocha’s Farm Products shop is also doing its bit to make sure you have a delicious turkey on your Christmas lunch/ dinner table. She says, “We use a stuffing of ham, bacon, cold cuts, mushrooms and green apples, which is packed separately with your turkey, so that it becomes easier to carve the bird at the table. This is accompanied with a sauce that goes with the turkey which weighs about two-and-a-half  to three kilos.  An Indian turkey is priced at Rs 1,450 a kg, while an imported one sells for Rs 2,200 a kg.”

Joe Gomes, Santacruz

Joe Gomes of Tastebuds Hospitality has been roasting the bird for the festive season for more than 27 years. He says, “We pot roast and oven roast our turkeys, and that takes about two-and-a-half to three hours of cooking time. We use a stuffing of chicken mince, pistachios, chestnuts and wine, and our turkeys are priced at Rs 1500 per kg.” While Joe does not do deliveries, you can pick up your Christmas stuffed turkey order from Wellington Catholic Gymkhana, Satacruz (W).
