While the debate on what makes the best breakfast creation — waffles or pancakes is still on and is no closer to the end, International Waffle Day is just round the corner, and will be marked on March 25. For waffle lovers, it’s just another excuse to tuck into the traditonal Belgian waffle with loads of maple syrup on top, but for those looking to take it to the next level, there’s always waffle magic that chefs are game for.

Duck & Waffle Confit dish

USP: It’s a dish that’s ideal for a Sunday brunch, chef Simarpal Singh Virdi, of Theory, says, “Hot, crispy waffles, salt cured and Confit Duck leg served with maple syrup, Jus and free range fried egg with a perfectly runny yolk. This meal works well for a brunch.”
COST: Rs 1,100, plus taxes

Sugar Free Marshmellow Fluff

USP: It’s different. Husna Jumani, pastry chef says, “Marshmallow fluff is something that I always wanted to incorporate in the menu. The Fluffernutter is originally a sandwich and I thought the flavours would transition perfectly as a waffle, also it’s a perfect blend with Nutella and Peanut Butter.”
COST: The Fluffer Nutter Waffles is part of the Sunday Brunch, which is priced at Rs 2,400, plus taxes

Strawberry Waffle

USP: Strawberries from Mahableshwar are sourced to make it. Parvinder Singh, owner of Garde Manger Cafe, says, “Strawberries, which are in season, are creatively paired with the crisp and crunchy waffles.”

Savoury Pumpkin Waffle

USP: It’s a gluten-free waffle filled with roasted kabocha commonly called Japanese Pumpkin. Chef Paul Kinny, culinary director Bellona Hospitality, says, “The Savoury Pumpkin Waffle is something that ticks all the boxes. We’ve made use of kabocha, which is essentially pumpkin’s sweeter Japanese relative. Apart from having a chestnut-like texture and sweet potato-like taste profile, this Asian squash is high on beta carotene, iron, vitamin C.”

Blueberry cheesecake waff-wich

USP: You get to enjoy the best of a waffle and a sandwich. Shrey Aggarwal, founder The Belgian Waffle Co, says, “The BWC have introduced the novel concept of waffle sandwich which is freshly created at our waffle station. The fillings are filled in between two freshly baked crispy waffles. Since cheesecakes are a sought after dessert, we decided to marry the flavour of the cheesecake to the crispiness of the waffle. The Blueberry cheesecake waffle is a combination of blueberry compote and cream cheese filled in between two waffles. This is generally finished with one scoop of ice cream and this is also one of the best-selling waffles at the store.”

Zaffrani Malpua and Rabdi waffle

USP: Desi flavours presented in a modern way. Chef Milan Gupta says, “Malpua is generally fried and sweet. It’s a heavy dessert but I wanted to serve it in a modern way minus the guilt of the added calories. Hence, I used the malpua batter to create a waffle. Since rabdi and malpua always go together. I chose to make a rabdi mousse, served with a saffron syrup and a trio of ice creams including lemon, chocolate and strawberry.”
COST: Rs 316

Belgian Chocolate Waffle

USP: It’s a  bubble waffle, which is crispy and crunchy. Tanvi Chowdhri owner of Papacream says, “We felt that the regular waffles were done and dusted and it required a revamp. Thus, we came up with the concept of bubble waffles, the perfect balance of cripsy and soft designed to look like the bubble paper which we all love to pop. The warm crispy outer covering with the foamy softer center topped with ice cream worked amazingly as a combination by giving the crispy, crunchy texture and the perfect balance of warm and cool from the freshly baked waffle and frozen ice cream. Currently, we have the Belgian Chocolate waffle and the Very Berry Waffle.

Crispy Khimchi Fried Broccoli Waffle

USP: A savoury waffle that packs in the flavour. “The Crispy Kimchi & Crunchy broccoli on freshly made Tobanjan spiced waffles topped with Cusabi flavoured sour cream and served with an apple and fennel salad works as a great combination. Most people strongly associate waffles as a breakfast option. We wanted to bring out the versatility of waffles through our loaded savoury waffles. The crispness of Kimchi blends beautifully with the fluffiness of the waffle and adds to the flavour,” says chef Hansel.

Veggie Waffle Club

USP: It’s an ode to the city’s roadside staple food — Bombay masala sandwich with a twist. The waffles which are crisp on the outside and yet have a bite to it replace the grilled bread and the veg patty more than makes up for the aloo masala.
