Le Cordon Bleu Patisserie Chef Anjani Rawat’s latest venture is about making people feel at home with her conceptual kitchen and baking studio ‘Apron Patisserie’ that officially opens next week in Breach Candy. We caught up with her over some cake and truffles, talking about food, baking, making chocolate and throwing a tea party like no other. 

Donning the apron on your behalf

After donning the toque in this case the baker’s hat for more than six years, Anjani decided to take things to the next level with a space of her own. Specialising in eggless, gelatin–free baked treats, the Le Cordon Blue Patisserie Chef tells us she has put on the apron to personalise and customise cakes and other baked goodies on demand. 

Anjani shares, “When I decided to do this professionally I realised that most spaces in the city have a fixed menu. So, it does not leave you with too many choices as you have to choose from what’s on the menu. I did not want to go that way as I wanted the customer to have what they wanted in terms of flavour, design and presentation. That’s how Apron came about. Technically I am just wearing the apron for you. I am baking, but it’s all your idea. You pull the strings of this apron.” 

Apron v/s other bakeries

Situated in the heart of South Mumbai, Apron Patisserie will host workshops, programs, and concept ideas. The space has sections for baking, icing, assembling and packaging, with the heavenly whiff of fresh cookies and cakes wafting in the air. Anjani also plans to utilise the Breach Candy office space for meetings, pick up orders, and as a one-stop point for doling out her range of baked goodies, some of which include wedding cakes, teatime cakes, cookies, truffles, blondies, brownies, cupcakes and the very much in trend cakesicles. 

On demand

Anjani adds, “Currently, cakesicles ie cake on sticks are a big hit with all age groups as they look pretty and are not messy and easy to devour on the go. While the demand for gluten-free and vegan baked goodies are also gainning momentum.”

Clearly, the customer is king here as it is he or she holds the strings to this Apron that will let you make, bake and eat your cake too — all in one space.
