Too many cooks spoil the broth, so goes the old adage. But when five presidential chefs get together, they can satisfy the most exacting of gourmands, vegetarians included.

As India plays host to the general assembly of the Club des Chef des Chefs (CCC), an exclusive club whose members are chefs of the heads of states, for the first time, a lucky few will be invited to a gala charity dinner at Hotel Imperial on Tuesday.

Though there are some absentees — China, Ireland, Israel, Poland and South Africa — at the annual summit of the 25-member CCC, the event promises to be a grand six-course affair.

Montu Saini, chef to President Pranab Mukherjee, is jointly curating a meal with US's Cristeta Comerford, Italy's Fabrizio Boca and Massimo Sprega, and Monaco's Christian Garcia.

On the menu is velouté de potimarron (roasted kuri squash soup), risotto aux herbes (risotto with mixed herbs and aged parmesan), turban de sole riviera, légumes confits aux olives, and fresh sole roulade with vegetable confit and black olives. For vegetarians, the exclusive menu will comprise fromage cottage (paneer), polenta au basilic et gâteau provençal (cottage cheese and basil polenta with a medley of vegetables). Host India will take care of the sweet tooth with au riz perfumè ã la rose (rose scented rice pudding) and la citrouille sucree et fruits frais (sweetened pumpkin and fresh fruits).

Proceeds from the dinner will go to the Kailash Satyarthi Foundation, a charity headed by Nobel Peace Laureate Kailash Satyarthi, and the Princess Diya Kumari Foundation of Jaipur.
Meanwhile, on Monday, President Mukherjee invited the delegation including Canada's Neil Dhawan, Denmark's Martin Kristoffersen, Estonia's Taigo LEPIK, and France's Bernard Vaussion, for high tea. The delegation is scheduled to meet Prime Minister Narendra Modi on Tuesday.

In consonance with the aim of promoting local food and healthy eating habits, the chefs will also undertake a culinary tour to the spice market in Chandni Chowk. Also on the itinerary are trips to Agra and Jaipur.

The Paris-based club has also announced a three-month scholarship for the best student of the Institute of Hotel Management, Pusa, New Delhi, who will get training in palaces of Europe, including in Monaco.

This is the 40th edition of the general assembly of CCC. Gilles Bragard, who founded the club in Paris in 1977, envisaged the annual summit as a place for chefs to meet once a year and exchange notes and recipes and learn each others' traditions and cultures. He wanted to make the club a 'G20 of chefs'.
